this makes 13 tuiles
* use 1/2 tbsp as one next time! smaller one is easier to snack


* could sub sugar with brown sugar

Yield: 5-6 dozen cookies
5 Tbsp (75 g) unsalted butter, at room temperature
½ cup (65 g) icing sugar, sifted
2 Tbsp (40 g) honey
1 egg white
2/3 cup (100 g) all-purpose flour (plain flour)
* sugar makes the cookie spread, so there's less sugar in this one than the ladyfinger one

用料  

egg white 1 large
powder sugar (40 g) 5 tbsp + 1 tsp
almond slices (50 g) 3/8 cup +1.14 tbsp
flour (15 g) 1/8 cup
butter, melted (15 g) 1.05 tbsp
sesame seeds for sprinkle

almond tuiles的做法  

  1. mix everything together, no need to overmix

  2. chill in fridge for 15 mins

  3. scoop 12.5 tuiles on the baking tray

  4. dip hand in cold water and flatten the tuiles

    * the thiner you flatten them, the crispier they get

  5. sprinkle sesame seeds on top and press to fix them

  6. bake at 374 F for 10 - 12 mins till golden brown

  7. immediately transfer them to somewhere w/ curvature to cool
