Green Tea Mille Crepes的做法步骤图

用料  

large eggs 2
granulated cane sugar (for batter) 35 g
salt 1 g
all-purpose flour 120 g
unsalted butter 17 g
whole milk 300 g
heavy whipping cream 300 g
green tea powder (for batter) 5 g
green tea powder (for cream) 5 g (optional)
powdered sugar (for cream) 40 g

Green Tea Mille Crepes的做法  

  1. Mix eggs, granulated sugar and salt together; Combine green tea powder and flour together in another bowl, mix with whisk

  2. Use microwave oven, melt unsalted butter. Let melted butter cool down to room temperature

  3. Sift the combined powder into egg mixture. Mix with whisk until no lump in the batter.
    *Make sure sift small amout each time, and mix during sifting

  4. Add melted butter into mixture, when the mixture absorb most of the butter, pour milk in and mix until no lump in the batter

  5. Sift the mixed batter into a large bowl, repeat three times to make sure the smoothness of the batter

  6. Cover the bowl with plastic wrap, refrigerate for about 1 hour

  7. Heat the pan at low heat, pour some batter to cover the bottom of the pan

  8. Cook with low heat. When the edge of the crepe getting dry, and the center of the crepe not sticky, transfer the crepe to a plate, and cover with a wet cloth

  9. Continue cook the crepe unitl all batter is used. Put all crepe with a wet cloth in refrigerator to cool down to room temperatrue

  10. Prepare the cream. Add powdered suagr into cold heavy whipping cream. Whip at high speed until the cream gets thicker and can maintain stiff peaks

  11. Place one crepe on a board, spread the cream onto the crepe, then place another crepe on top. Repeat this process unitil all crepe is used.

  12. It is better to refrigerate the finished crepe for a while to help set the cream.

  13. Before serving, sift some green tea powder on the top of the crepe for decoration.

小贴士

Tips:

1. all ingredients used for batter need to be room temperature
2. when mixing the ingredients, it is better to mix in one direction
3. When you see the center of the crepe is too high, you can press the center of the crepe for better spread ;)
