1. Whisk 2 eggs & 2tbsp milk
   salt & black pepper

2. In a sauce pan: on & off heat
   Melt knob of butter: low heat
   pour in the egg: stirring--just set (use a spatula)
   *add grated cheese
   *sprinkle with chopped chives

3. to serve.
   toast
   smoked salmon
   scrambled eggs
