用料  

Cooking Wine 5 ml
Corn Starch 20 gram
Garlic 10 gram
Ginger 10 gram
Oyster Sauce 5 gram
Scallop 500 gram
XO Sauce 10 gram

Wok Fried Scallops With XO Sauce的做法  

  1. King scallops

  2. After defrosted , add some white vinegar and starch, stir gently for about 1 minute, then rinse with water and drain.

  3. Pickled scallops:

  4. Drain scallops, add a little starch, sugar and olive oil and marinate for 10 minutes

  5. Mince ginger and garlic.

  6. Cut scallion into small pieces

  7. Add a little oil to the nonstick pan and fry scallops until golden on both sides. Remove and set aside

  8. Heat up the frying pan and add some olive oil. Saute minced ginger and garlic, add XO sauce, stir fry until fragrant, add scallops, add soy sauce, oyster sauce and sugar, add a little water, wait for water to boil, add lid and simmer for about 1 minute to make scallops fully cooked

  9. When the time is up, open the lid, add the scallions, pour in the starch, thicken slightly and stir fry evenly.
